Breakfast Tacos
A tradition Mexican dish, a taco is a rolled and pliable corn tortilla that’s filled with something edible. The word “taco” literally means “plug” (a rolled paper for plugging a hole) or a paper/cloth patch for musket balls.
In the United States, tacos are very popular. Breakfast tacos are one of the more popular versions of taco in Tex-Mex cuisines.
| Ingredients: |
* 1 cup hash brown potato mix (with onion)
* 2 cups hot water
* 3/4 tsp salt
* 10 burrito-sized flour tortillas
* 10 eggs, beaten
* 1 lb pork sausage, cooked, crumbled and drained
* 1/2 tsp salt
* 2 tbsp butter
* salsa and pepper to taste

In a bowl, combine hash browns, water and salt. Mix well and let stand uncovered for 15 minutes. Drain hash browns. In a skillet, melt butter. Cook beaten eggs and sausage over low heat. Stir gently until eggs are done. Spoon egg and sausage mixture in warm tortillas. Sprinkle with pepper or top with salsa (optional).
Taco Trivia
- Just like the original tacos, fish tacos originated in Mexico. Fish taco consists of fish (grilled or fried), lettuce and Pico de Gallo (tomatoes, cilantro, onions, lemon juice) placed on tortilla (corn, wheat or flour). Fish tacos are very popular in California and Colorado.
- There are several “asador” or tacos on the grill: carne asada, tacos de tripita (cow intestine tacos) and chorizo asado (Spanish style sausage). Each of these are served on two overlapping tortillas with salsa, guacamole, cilantro and onions.
