Easy Banana Bread Recipe

Banana bread is one of the quickest bread you can make. Instead of yeast, it uses baking soda as the leavening agent. It doesn’t need kneading too since the bread is simply baked from thick batter.

Ingredients:

* 2 1/4 cups all-purpose flour
* 1 tsp baking soda
* 1 tsp apple pie spice
* 1 cup white sugar
* 2 eggs
* 1/3 cup unsweetened applesauce
* 4 ripe bananas, mashed
* 1 tbsp vanilla extract
* 1/2 cup raisins

Directions:

Preheat oven to 375ºF or 190ºC. Prepare a 9″x5″ loaf pan by lightly greasing and flouring it. Mix flour, baking soda, nutmeg, cinnamon and white sugar in a large bowl. Stir in eggs, bananas, applesauce and vanilla extract. Fold raisins in. Pour batter in loaf pan. Bake for 45 to 60 minutes. Insert knife in center of bread. Loaf is done if the knife comes out clean.

Here’s a tip for vegetarians and vegans: You can make banana bread by using soy yogurt, tofu or more bananas in place of eggs.

For a low-sugar version of this recipe, use Splenda sugar substitute in place of sugar.
