Easy Banana Loaf Recipe

Bananas are widely cultivated in Southeast Asia, Australia and in the tropics. According to the USDA, bananas are rich in carbohydrate, sugars, dietary fiber, fat, protein, vitamin A, thiamin (vitamin B1), riboflavin (vitamin B2), niacin (vitamin B3), pantothnic acid (vitamin B5), vitamin B6, folate (vitamin B9, vitamin C, calcium, iron, magnesium, phosphorus, potassium and zinc.

Try this delicious, low-carb, and easy banana loaf recipe.

Ingredients:

* 12 oz. cream cheese, softened
* 5 eggs
* 3 medium size bananas, mashed
* 1/4 cup soy protein powder
* 1/3 cup stone ground whole wheat flour
* 1 tsp baking powder
* 16 packets Splenda sugar substitute
* 2 tsp vanilla extract
* 2 tsp grated lemon peel (optional)
* 1 cup unprocessed wheat bran
* 1 cup whole almond meal

Directions:

Preheat oven to 325ºF. Lightly grease or butter three small loaf pans. Optionally, place strips of waxed paper on the bottom of the pans. Allow strips to hang over the edge.

In an electric mixer bowl, place cream cheese and two eggs. With a flat beater, beat until smooth, thick and fluffy. Make sure there are no lumps. Add the rest of the eggs one at a time. Beat the mixture briefly after adding each egg. Add the mashed bananas, soy protein powder, whole wheat flour, baking powder, Splenda, vanilla extract and lemon peel, beating at a slow speed. Add wheat bran and nuts. Blend at low speed.
 
Place batter in the pans. Bake for 45 to 55 minutes. Allow to cool before slicing. To serve banana loaf, cut into 1/2-inch thick slices. Each serving has 4.4g of carbohydrates.

Banana bread is good for 3 to 4 days if refrigerated. Freeze remaining bread that will not be consumed immediately.
