Walnut Muffin
Muffins are small cakes that resemble cupcakes round conical tops with cylindrical bases). Muffins are typically sweet, and there are several varieties and flavors of muffins using ingredients like blueberries and chocolate chips.
Below is a delightful and delicious recipe for walnut muffins.
| Ingredients: |
* 12 oz. cream cheese, softened
* 5 eggs
* 15 packets Splenda sugar substitute
* 2 tsp vanilla
* 1 1/2 cups whole almond meal
* 1 cup unprocessed wheat bran
* 1 tsp baking powder
* 2 tsp ground cinnamon
* 1 cup chopped walnuts

Preheat oven to 325ºF. Lightly grease a 12-cup muffin pan or use muffin liners. In an electric mixer bowl, place cream cheese and two eggs. With a flat beater, beat until smooth and fluffy. Add remaining eggs one at a time. Beat briefly after adding each egg. Put electric beater on slow speed and add all other ingredients except the walnuts. Add walnuts when mixture is well blended. Pour mixture in muffin pan. Bake for 20 to 25 minutes or until muffins are golden brown. Freeze muffins that will not be consumed immediately.
Serves 12.
