Easy Fish and Vegetable Recipe

Got no time to make an elaborate main course dish? Try this easy fish and vegetable recipe. The fish and vegetables are wrapped in lettuce and take less than an hour to prepare. 

Lettuce Wrapped Fish and Vegetables

Ingredients:

* 6 large lettuce
* 1 medium carrot, shredded
* 1 small zucchini, shredded
* 1 1/2 pounds fresh or frozen (thawed) fish fillets, cut into 6 serving pieces
* 1 tsp dried marjoram leaves
* salt and pepper to taste
* 2 tbsp unsalted butter

Directions:

Preheat oven to 400ºF. Wilt lettuce leaves by placing them in hot water for one minute. Drain lettuce leaves and lay them flat. Place enough vegetables in each leaf, leaving the edges clear. Place one fish fillet on the vegetables. Sprinkle marjoram, salt and pepper. Fold leaf around vegetables and fish. Place folded leaves in a large baking dish with the seams facing down. Cover dish with aluminum foil. Bake for 30 minutes.
