Potato Salad Recipe

Potato salad is perhaps one of the most popular dishes in the world. Although called a “salad”, potato salad is classified as a side dish because it is usually mead to accompany the main course.

You can serve potato salads with roasts, barbecue, hamburgers, hot dogs and cold sandwiches. If you’re having an outdoor barbecue, a picnic or some other casual meal or event, don’t leave out the potato salad! You can make potato salad in large quantities and in advance. 

This potato salad recipe is both tasty and easy.

Ingredients:

* 2lbs red potatoes, cubed and cooked until tender
* 6 hard boiled eggs, chopped
* 3/4 cup mayonnaise
* 1/4 cup sour cream
* 1 tbsp vinegar
* 1 medium onion, diced
* 2 tbsp fresh dill, minced
* 1 tsp salt

Directions:

Combine all ingredients in a bowl. Cover and chill for a minimum of 1 hour.

Potato Trivia:- According to botanists, potato originated from the Andes — from Colombia to Argentina, with a concentration of cultivated and wild potato species in Peru.- Approximately 5,000 potato varieties exist today, 3,000 of which are found in the Andes (Bolivia, Peru, Colombia and Ecuador).

- A medium size potato contains about 26g of carbohydrate (starch).

- In Europe, mashed potatoes are a major component of a number of traditional dishes such as shepherd’s pie, champ and the Scottish “mashit tatties.”
